  2. 200gr. queso manchego rebanados en tiras
  3. 200gr. jamón de pavo natural grueso rebanado en tiras

  5. 5 gr. sal y de pimienta molida negra para sazonar
  6. 6 tortillas de harina burreras (grandes)
  7. 20 gr. mantequilla clarificada o derretida
  8. Para la salsa de Champiñones
  9. 500 gr Champiñones frescos lavados pelados y rebanados
  10. 1,000 ml. caldo de pollo
  11. 15 gr (1 cda) mantequilla
  12. 20 gr (2 cdas) fécula de maíz (Maizena)
  13. 2.5 gr (1 pz. ) de Chile de árbol seco
  14. 5gr Orégano seco
  15. Sal y pimienta

  1. Extender el filete en un plato, incorporarle el queso manchego, jamón y el queso amarillo.
  2. Enrollarlo, salpimentarlo bien, así se hará con todas las piezas.
  3. Sellar en una sartén las pechugas rellenas lado a lado, ir poniendo en un refractario engrasado, y meter al horno ya pre-calentado a 180 grados centígrados durante 20 minutos.
  4. Sacar del horno las pechugas.Untar las tortillas con mantequilla clarificada y envolver las pechugas en la tortilla como si fueran burritos...
  5. Volver a meter al horno durante 5 o 10 minutos a que se dore la tortilla, sacar del horno, partir las pechugas a la mitad.
  6. Servir las pechugas y bañar con salsa de champiñones y acompañarlo con su guarnición preferida.
  7. SALSA DE CHAMPIÑONES:
    En una sartén a fuego medio agregar los 15 gr de mantequilla,incorporar los champiñones y sofríe,
  8. Cuando comiesen a sacar jugo vierte en ellos una taza de caldo de pollo, incorporando también el chile.
  9. En un vaso con 10 ml de agua disuelve la fécula de maíz y vierte a la salsa poco a poco moviéndola para que no se haga grumos.
  10. Salpimentar y dejar que reduzca la salsa. Servir la salsa caliente.
