En la misma olla se incorpora mas materia grasa (en caso de ser necesario) y se sofríen los chiles, teniendo cuidado de que no se quemen; ya sofritos los chiles se incorpora fondo de ave (caldo de pollo) solo la cantidad necesaria para que los chiles se suavicen; ya que los chiles se encuentran "suaves" por la cocción en el fondo de ave, se escurren (sin tirar el fondo con el cual se termino su cocción) y se reservan.
  4. Con ayuda de una licuadora se licuan perfectamente las tres preparaciones, asegurando que no queden grumos y se adquiera una consistencia tersa y homogénea.
  5. Ya teniendo todos los ingredientes perfectamente licuados se incorporan todos en la misma olla; no importa el orden, todos se mezclarán. Se prende al fuego (suave) y se le incorpora el chocolate rallado, se le da una cocción de 30 a 45 minutos, sin dejar de mover; de ser necesario se incorpora fondo de ave para dar la consistencia deseada. Transcurrido el tiempo deseado se sazona con sal, pimienta y resto de condimentos.
  6. Se baña el pollo con el mole y se espolvorea de ajonjolí adicional, el cual previamente se tostó ligeramente.
