- Cuando el pollo esté cocido, sacarlo y desmenuzarlo. Colar el agua en el que se cocinó el pollo y reservar el caldo (lo vamos a usar para cocinar el arroz). En una olla aparte sofreír la cebolla, el morrón, el ajo, una ramita de apio todo finamente picado
- Cuando las verduras estén cocinadas, agregar el achiote y mezclar bien hasta que cambien de color. Agregar el arroz, y mezclar hasta que el arroz cambie de color, revolver un par de minutos. Agregar los guisantes y el pollo. Mezclar un minuto más. Es importante NO agregar el agua todavía.
